Strawberry Jam




6 cups prepared fruit (about 2 1/2 quarts fully ripe strawberries)

4 1/2 cups sugar

1 box sure*Jell Light Fruit Pectin



Prepare fruit. Stem and thoroughly crush fruit, one layer at a time, about 2 1/2 quarts strawberries. Measure 6 cups into 6 or 8 quart saucepan.



Then make Jam. Mix 1/4 cup sugar with fruit pectin, and then stir into fruit in saucepan. Place over high heat and stir until mixture comes to a full boil. Immediately add remaining sugar and stir. Bring to a full rolling boil and boil hard 1 minute. Stirring constantly remove from heat and skim off foam with metal spoon. Ladle quickly into hot jars, filling to within 1/8 inch of top. Cover and process in boiling water bath for 10 minutes. Makes about 9 cups, about 7 (8ounce) jars.

Fresh Strawberry Sauce




1 pint box fresh strawberries

1/4 cup sugar

1/3 cup Grand Marnier or orange juice



Wash strawberries gently in cold water

Drain hull

In chafing dish, over direct heat, combine all ingredients

Heat, stirring occasionally, about 10 minutes or until sugar dissolves

Place chafing dish over boiling water in water pan

Serve sauce warm over ice cream or meringue shells

Makes 4 to 6 servings

Strawberry Sorbet




4 cups fresh strawberries, washed, hulled and drained

3/4 cup sugar

Dash salt

1/2 teaspoon lemon juice

1/2 cup cold water



Halve berries,

Place in a large bowl along with sugar and salt.

Stir to mix

Let stand, stirring occasionally, 2 hours or until berries are soft and sugar is dissolved

Process mixture, one half at a time, in a blender

Stir in cold water and lemon juice.

Pour into an 8 x8-inch metal pan

Freeze until firm

Partially thaw, beat with electric mixer or in a food processor until smooth and fluffy

Return to pan cover and re-freeze

Serves 2

Strawberry Marlow


16 marshmallows

1 cup milk

Few grains salt

1/2 pt. whipping cream

1 pt strawberries, crushed

1/2 cup sugar

Red coloring if desired



Heat milk over hot water; add marshmallows, stirring until melted to produce a smooth mixture

Crush strawberries, add sugar and let stand to dissolve

When first mixture is cold and slightly stiffened, combine with the sweetened strawberries and stiffly beaten cream

Pour into trays and freeze

Strawberry Banana Mousse




1 pkg (3oz) strawberry flavor gelatin

1/2 cup heavy cream, whipped

4 bananas, sliced



Dissolve gelatin in water according to pkg directions

Chill until partially thickened (like unbeaten egg white)

Fold in whipped cream

Fill parfait glasses with alternate layers of gelatin mixture and banana slices

Garnish with additional banana slices and berries in season

Makes 6 servings

Strawberry Surprise Salad



1 (6oz) pkg strawberry gelatin

2 cups boiling water

1 (10oz) pkg frozen strawberries halved

2 large bananas mashed

4 oz chopped pecans

1/2 pint sour cream

Head of Lettuce



Dissolve gelatin in boiling water set aside to cool

Add berries, bananas and pecans

Pour half of mixture into a 9x13 inch pan and put in refrigerator to congeal

Spread sour cream over congealed gelatin

Pour other half of gelatin mixture over sour cream

Return to refrigerator until fully congealed

Cut and serve on lettuce leaves

Serves 12 to 15



It looks really cool like marble when it’s done.

Strawberry Coffee Cake:



Simple and Delicious! Serve it warm...



1 cup all - purpose flour

1/2 cup sugar

2 teaspoons baking powder

1/2 teaspoon salt

1 egg

1/2 cup milk

2 Tablespoons butter or margarine, melted

1 1/2 cups sliced, fresh strawberries





Topping:

1/2 cup all - purpose flour

1/2 cup sugar

1/4 cup cold butter or margarine

1/4 cup chopped pecans, optional



In a large bowl, combine the dry ingredients. In another bowl, combine the egg, milk and butter, stir into the dry ingredients just until moistened. Pour into a greased 8 inch square baking dish. Top with strawberries.

For topping, combine flour and sugar in a bowl; cut in butter until crumbly. Stir in pecans, if desired. Bake at 375 degrees for 30-35 min. or until toothpick inserted in center comes out clean. Cut into squares; serve warm. Yields 9 servings

1/3 cup sugar

1/4 cup sour cream

Mint leaves (optional)

Add next 5 ingredients, and process until smooth.

Serve immediately or chill until serving time

Sweet Heart Cake




1 pkg (15oz) angel food cake mix

Strawberry Filling

3 cups heavy cream

Small silver dragees

1 paper doily cut into heart shape

6 small pink roses and several rosebuds

9 inch narrow pink velvet ribbon



Preheat oven to 375F

Line bottom of heart shape pan (12 cup or No. 4 size) with waxed paper

Make angel food cake as package label directs, turn into pan

Bake, on lowest shelf of oven, 35 to 45 minutes

Let cool completely, in pan, on wire rack

Meanwhile, make Strawberry Filling

With sharp knife, gently loosen side of cake from pan

Turn out onto serving plate, remove paper from bottom

With wooden picks, mark depth of cake into thirds

With a serrated knife, slice off top third crosswise, reserve

With fork, hollow out center third of cake

Leaving a 1/2inch thick edge all around

Remove picks

Pour Strawberry Filling into hollow

Refrigerate cake, uncovered, until filling is firm at least 30 minutes

Set reserved layer on top of cake

To Frost and Decorate

In medium bowl, beat cream with rotary beater just until stiff

With 2/3rds of whipped cream, smoothly frost top and side of cake

With rest of cream in pastry bag, using No 6 decorating tip, pipe, double row of rosettes, one on top of the other, around top edge of cake, to outline heart shape

Also, pipe row of rosettes around base and down point of heart

Top each rosette with silver dragee

Refrigerate several hours, or until ready to serve

Just before serving, put doily on cake, and arrange ribbon tied roses and rosebuds

Lift off doily and flowers before cutting cake

Makes 12 servings



Strawberry Filling for Sweetheart Cake

1 pkg (10oz) thawed sliced strawberries

1 cup hot water

1 pkg (6oz) strawberry flavored gelatin

1/2 cup finely chopped almonds

1/2 cup heavy cream

1/4 cup kirsch, or 1-1/2 tsp almond extract



Drain strawberries, reserving 1/2 cup juice, Crush with potato masher

Pour water over gelatin in bowl, stirring until gelatin is dissolved

Stir in reserved strawberry juice, berries, and almonds

Refrigerate until consistency of unbeaten egg white at least 1 hour



In small bowl, beat cream with rotary beater just until stiff

With wire whisk or rubber scraper, gently fold kirsch and whipped cream into gelatin mixture until well combined

Refrigerate until slightly jelled, not firm

About 30 minutes

Use as filling for Sweetheart Cake

Strawberry Tiramisu




1 (8oz) pkg Cream Cheese

3-1/2 cups cold milk

2 ( 4 serving) pkgs vanilla instant pudding and pie filling

2 (3oz) pkg lady fingers

1 (8-oz) container strawberry-flavored whipped topping, thawed

2-1/2 cups sliced strawberries

2 sq. semisweet baking chocolate, grated (optional)





Beat cream cheese in a large bowl with electric mixer on medium speed until creamy

Gradually add milk, beating until well blended

Add pudding mix

Beat on low speed 1 minute or until well blended



Split lady fingers lengthwise

Line the bottom of a 13x9 inch pan with 1 pkg of split ladyfingers

Top with half the pudding mixture, half the whipped topping and half the strawberries

Repeat layers, ending with strawberries

Refrigerate 3 hours or until ready to serve

Sprinkle with grated chocolate, if desired

Serves 10

Strawberries 'N Cream Bread




1 3/4 cups all purpose flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/2 teaspoon salt

1/4 teaspoon ground cinnamon

1/2 cup butter, room temperature

3/4 cup sugar

2 eggs, room temperature

1/2 cup dairy sour cream, room temperature

1 teaspoon vanilla extract

1 cup coarsely chopped fresh strawberries

3/4 cup toasted chopped walnuts, if desired.



Grease an 8x4 inch loaf pan, set aside.

Preheat oven to 350

In a large bowl, combine flour, baking powder, baking soda, salt and cinnamon, set aside.

In small bowl of electric mixer, cream butter. Gradually add sugar. Beat 1 minute or until light and airy.

Beat in eggs one at a time.

Beat in sour cream and vanilla.

Stir into flour mixture only until dry ingredients are moistened.

Fold in strawberries and nuts, if desired.

Turn into prepared pan, smooth top.

Bake 60 to 65 minutes or until a wooden pick inserted in center comes out clean.

Let stand in pan 10 minutes.

Turn out onto a rack to cool.

Makes 1 loaf.

Strawberry Short-Cake




2 cups flour

4 tablespoon sugar

2 teaspoons baking powder

4 tablespoons butter

2 eggs, beaten

1-1/2 to 2 cups whole milk or half-and-half

Sliced, slightly sweetened strawberries



Preheat ovent o 350

Grease a 10-inch round pan



Mix together flour, sugar and baking powder. Cut in butter

Add the beaten eggs and enough milk to make a semi-stiff batter (1-1/2 to 2 cups)

Pour into prepared pan

Bake 30 minutes to 35 minutes.

Until golden and a toothpick comes out clean

Top with Strawberries

Serves 8 to 10

Strawberry Cream Dessert




1 (3-ounce) package Ladyfingers,

1 (6-ounce) package sugar-free Strawberry Gelatin

2 cups Strawberries, washed and cut in slices (plus berries for garnish)

1-3/4 cups boiling water

2 cups ice cubes

1 (8-ounce) tub frozen whipped topping, thawed.



Split lady fingers lengthwise. Trim 3/4 inch from ends of ladyfingers. Place ends on bottom of a 9-inch spring form pan.

Stand remaining ladyfingers around side of pan, with cut sides facing in.



Mash strawberries (except those for garnish). Stir boiling water into gelatin in large bowl, until completely dissolved.

Add ice cubes, stir until melted.

Add whipped topping and mashed strawberries, gently stir until well-blended.

Refrigerate 10 minutes or until mixture is very thick and will mound.

Spoon into pan

Refrigerate 3 hours or until firm.

Remove sides of pan

Garnish with reserved strawberries

Serves 12

Lady Fingers




3 eggs, separated

1/8 teaspoon salt

3 tablespoons plus 1/3 cup sugar, divided

2/3 cup cake flour

1 teaspoon grated lemon rind

Confectioner’s sugar



Preheat oven to 300 degrees



Line two cookie sheets with parchment paper

In a small bowl, combine egg whites and salt, beat until foamy

Gradually beat in 3 tablespoons sugar until soft peaks form.

In a large mixing bowl, combine egg yolks with remaining 1/3 cup sugar, beat until thick and lemon-colored.

Sprinkle 1/3 of the flour over egg yolk mixture, fold gently.

Repeat with remaining flour until just blended.



Stir 1/4 of the egg whites into the batter.

Fold in lemon rind and remaining egg whites



Fit a pastry bag with a 1/2 inch plain round tip, fill bag with batter



Press batter. 1-inch apart, onto prepared cookie sheets to form strips about 3-inches long and 1-inch wide.

Sprinkle lightly with confectioner’s sugar



Bake for 20 minutes or until delicately brown.

Carefully remove from cookie sheet.

Cool completely on a wire rack.

Makes 2 dozen

Strawberry Devonshire




2 pints fresh strawberries

1-1/2 cups sour cream

1/4 cup (or more to taste) brown sugar, firmly packed



Wash and hull berries

Place in a large bowl

Chill

Just before serving, combine sour cream and brown sugar.

Beat until well-combined.

Serve over berries

Serves 4 to 6

Strawberry Meringue Torte



Bake at 350 for 30 minutes

1-1/3 cups sifted cake flour

1-1/4 tsp baking powder

¼ tsp salt

½ cup vegetable shortening

1-1/4 cups sugar

4 eggs, separated

1 tsp almond extract

1/3 cup milk

½ cup sliced blanched almonds

2 tbsp sugar



Strawberry filling recipe follows

½ cup currant jelly

3 pints strawberries, washed and hulled

1 tbsp water



Sift flour, baking powder and salt onto wax paper

Beat shortening ½ cup of the sugar, egg yolks and almond extract until fluffy

Stir in flour mixture alternately with milk, spread batter into two greased and floured 9x1-1/2 inch pans

Beat egg whites until foamy

Gradually beat in sugar until meringue is stiff, spread over batter.

Sprinkle with almonds and sugar

Bake at 350 for 30 minutes

Cool on wire racks

Spread strawberry filling on one layer

Top with second layer

Melt jelly with water, cool

Dip strawberries in jelly, arrange on cake

Refrigerate



Strawberry Filling

Crush 1 pint of the strawberries, let stand with ¼ cup of sugar 1 hour

Add 1 tbsp cornstarch

Cook, stirring, until thick

Cool
