| Strawberry Jam 6 cups prepared fruit (about 2 1/2 quarts fully ripe strawberries)4 1/2 cups sugar1 box sure*Jell Light Fruit Pectin Prepare fruit. Stem and thoroughly crush fruit, one layer at a time, about 2 1/2 quarts strawberries. Measure 6 cups into 6 or 8 quart saucepan. Then make Jam. Mix 1/4 cup sugar with fruit pectin, and then stir into fruit in saucepan. Place over high heat and stir until mixture comes to a full boil. Immediately add remaining sugar and stir. Bring to a full rolling boil and boil hard 1 minute. Stirring constantly remove from heat and skim off foam with metal spoon. Ladle quickly into hot jars, filling to within 1/8 inch of top. Cover and process in boiling water bath for 10 minutes. Makes about 9 cups, about 7 (8ounce) jars. | |

| Strawberry Surprise Salad
1 (6oz) pkg strawberry gelatin
2 cups boiling water
1 (10oz) pkg frozen strawberries halved
2 large bananas mashed
4 oz chopped pecans
1/2 pint sour cream
Head of Lettuce
Dissolve gelatin in boiling water set aside to cool
Add berries, bananas and pecans
Pour half of mixture into a 9x13 inch pan and put in refrigerator to congeal
Spread sour cream over congealed gelatin
Pour other half of gelatin mixture over sour cream
Return to refrigerator until fully congealed
Cut and serve on lettuce leaves
Serves 12 to 15
It looks really cool like marble when it’s done. | |

| Strawberry Coffee Cake:
Simple and Delicious! Serve it warm...
1 cup all - purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 egg
1/2 cup milk
2 Tablespoons butter or margarine, melted
1 1/2 cups sliced, fresh strawberries
Topping:
1/2 cup all - purpose flour
1/2 cup sugar
1/4 cup cold butter or margarine
1/4 cup chopped pecans, optional
In a large bowl, combine the dry ingredients. In another bowl, combine the egg, milk and butter, stir into the dry ingredients just until moistened. Pour into a greased 8 inch square baking dish. Top with strawberries.
For topping, combine flour and sugar in a bowl; cut in butter until crumbly. Stir in pecans, if desired. Bake at 375 degrees for 30-35 min. or until toothpick inserted in center comes out clean. Cut into squares; serve warm. Yields 9 servings

| Champagne Berry Soup
2 cups frozen strawberries, thawed
1/2 cup champagne
1/2 cup water
1/2 cup plain low fat yogurt
1/3 cup sugar
1/4 cup sour cream
Mint leaves (optional)
Fresh berries (optional)
Puree strawberries in a blender.
Add next 5 ingredients, and process until smooth.
Serve immediately or chill until serving time
Garnish each serving with mint leaves and fresh berries, if desired

| Strawberry Meringue Torte
Bake at 350 for 30 minutes
1-1/3 cups sifted cake flour
1-1/4 tsp baking powder
¼ tsp salt
½ cup vegetable shortening
1-1/4 cups sugar
4 eggs, separated
1 tsp almond extract
1/3 cup milk
½ cup sliced blanched almonds
2 tbsp sugar
Strawberry filling recipe follows
½ cup currant jelly
3 pints strawberries, washed and hulled
1 tbsp water
Sift flour, baking powder and salt onto wax paper
Beat shortening ½ cup of the sugar, egg yolks and almond extract until fluffy
Stir in flour mixture alternately with milk, spread batter into two greased and floured 9x1-1/2 inch pans
Beat egg whites until foamy
Gradually beat in sugar until meringue is stiff, spread over batter.
Sprinkle with almonds and sugar
Bake at 350 for 30 minutes
Cool on wire racks
Spread strawberry filling on one layer
Top with second layer
Melt jelly with water, cool
Dip strawberries in jelly, arrange on cake
Refrigerate
Strawberry Filling
Crush 1 pint of the strawberries, let stand with ¼ cup of sugar 1 hour
Add 1 tbsp cornstarch
Cook, stirring, until thick
