| Layered Pumpkin Dessert
1 pkg Hostess Twinkies (10 Twinkies) 1 pkg (8 oz) cream cheese softened 1 Cup powdered sugar 1 container (8 oz) Cool Whip thawed divided 2 pkgs instant vanilla pudding 1 can (15 oz) pumpkin 1-1/2 teaspoons pumpkin pie spice 1 cup milk Additional pumpkin pie spice
Slice Twinkies in half lengthwise and place cream side up in single Layer in 9x13 baking dish.
Using a mixer blend together cream cheese powdered sugar and 1/2 of The cool whip till smooth. Spread evenly over the Twinkies.
Combine pudding mix pumpkin, pumpkin pie spice and milk. Whisk until well blended and layer over cream cheese mixture. Carefully spread the Remaining cool whip over the pumpkin.
Lightly sprinkle with pumpkin pie spice and refrigerate several hours before serving | |

| Impossible Pumpkin Pie
3/4 cup sugar
1/2 cup reduced fat Bisquick
2 tablespoons diet margarine melted completely
1 can evaporated skim milk
1/2 cup egg beaters 99% egg substitute
1 can pumpkin
2 1/4 teaspoons pumpkin pie spice
2 teaspoons vanilla
Preheat oven to 350
Mix all ingredients together and pour into 9" sprayed pan.
Bake for 55 minutes
Keep out at least two cups of mixture until you put the filled pie dish in the oven, then add the last 2 cups before closing oven. It really fills the pan up. But it makes a great looking pie and tastes good too. | |

| Pumpkin Ribbon Pie:
5 c. corn chex cereal, crushed down to 1 1/4 cup...
1/3 c. firmly packed brown sugar..
1/4 tsp. ginger..
1/4 tsp. nutmeg...
6 T. margarine, melted..
1 c. canned pumpkin...
1 c. sugar..
1/2 tsp. cinnamon..
1/2 tsp. nutmeg..
1/4 tsp. salt..
1 tsp. vanilla..
1 c. whipping cream, whipped..
1 1/2 c. vanilla ice cream slightly softened...
Preheat oven to 300 degrees...grease 10" pie plate.. Combine cereal crumbs, brown sugar, 1/4 tsp. ginger, and 1/4 tsp. nutmeg. Add margarine. Mix thoroughly. Press evenly into bottom and up sides of pie plate. Bake 10 mins. Cool completely.
Combine pumpkin, sugar, salt, cinnamon, nutmeg, 1/4 tsp. ginger, and vanilla. Fold in whipped cream. Evenly cover bottom of cooled pie crust with ice cream. Spoon pumpkin filling on top.. Cover with foil and freeze 6 hrs...over night is best.
Makes 1 10" pie.. | |

| Pumpkin Pancakes

1 1/2 c. skimmed evaporated milk
2 tbsp. oil
2 eggs
1 tsp. vanilla
1/2 c. pumpkin
Mix all ingredients well & drop w/ladle onto a hot griddle or use a lg. iron skillet which has been greased well.

ProcedureBeat the eggs, sugar, oil and pumpkin till smooth. Add the spices to the flour and mix well then add to the pumpkin mixture. Add the raisins. Fill you tins 2/3 full and then sprinkle with brown sugar. Bake at 375 for 15-20 minutes. These muffins are very yummy and an excellent way to get your kids to eat their veggies, lol!! | Luscious four layer Pumpkin Cake
1 pkg (2 layer yellow cake mix
1 can (15 oz) pumpkin, divided
½ cup milk
1/3 cup oil
4 large eggs
1 ½ tsp pumpkin pie spice, divided
1 pkg (8 oz) cream cheese, softened
1 cup powdered sugar
1 tub (8 oz) cool whip topping thawed
¼ cup caramel topping
¼ cup chopped pecans
Preheat oven to 350
Grease and flour two 9 inch round cake pans
Beat cake mix, 1 cup of pumpkin, the milk, oil, eggs and 1 tsp of the pumpkin pie spice in large bowl with electric mixer on medium speed until well blended
Pour evenly into prepared pans
Bake 28 to 30 minutes or until wooden toothpick inserted in centers comes out clean
Cool in pans 10 minutes
Remove from pans to wire racks, cool completely
Beat cream cheese in small bowl with electric mixer on medium speed until creamy
Add sugar, remaining pumpkin and remaining ½ tsp pumpkin pie spice, mix well
Stir in the whipped topping
Cut each cake layer horizontally in half with serrated knife
Stack layers on serving plate, spreading the cream cheese filling between layers Do not frost top of cake
Drizzle cake with caramel topping just before serving
Sprinkle with the pecans
Store leftover cake in refrigerator
Makes 16 servings 1 slice each | |
