Layered Pumpkin Dessert

1 pkg Hostess Twinkies (10 Twinkies)
1 pkg (8 oz) cream cheese softened
1 Cup powdered sugar
1 container (8 oz) Cool Whip thawed divided
2 pkgs instant vanilla pudding
1 can (15 oz) pumpkin
1-1/2 teaspoons pumpkin pie spice
1 cup milk
Additional pumpkin pie spice


Slice Twinkies in half lengthwise and place cream side up in single
Layer in 9x13 baking dish.


Using a mixer blend together cream cheese powdered sugar and 1/2 of
The cool whip till smooth. Spread evenly over the Twinkies.


Combine pudding mix pumpkin, pumpkin pie spice and milk. Whisk until
well blended and layer over cream cheese mixture. Carefully spread the
Remaining cool whip over the pumpkin.


Lightly sprinkle with pumpkin pie spice and refrigerate several hours
before serving

Pumpkin Cobbler


3 eggs, beaten

15 oz can pumpkin

12 oz can evaporated milk

1 cup sugar

1/8 tsp salt

1-1/2 tsp cinnamon

1 tsp ground ginger

1 tbsp vanilla extract

1 pkg yellow cake mix

1-1/4 cup margarine, melted

1 cup chopped nuts



Mix the first 8 ingredients together, pour into an ungreased 13x9 baking pan. Sprinkle cake mix over the top, drizzle with margarine

Bake at 350F for 25 minutes

Top with nuts

Bake for an additional 15 minutes

Makes 15 to 18 servings

Pumpkin Chiffon Torte




1 cup finely crushed gingersnaps (about 24)

3 tbsp butter, melted

2 envelopes unflavored gelatin

1/2 cup milk

1/2 cup sugar

1 can (15 oz) solid pack pumpkin

1/2 tsp salt

1/2 tsp ground cinnamon

1/4 tsp ground ginger

1/4 tsp ground cloves

1 carton (8oz) frozen whipped topping, thawed

Additional whipped topping, optional



In a small bowl, combine cookie crumbs and butter

Press onto the bottom of a greased 9 inch spring form pan, set aside

In a saucepan, combine gelatin and milk, let stand for 5 minutes

Heat milk mixture to just below boiling, remove from the heat

Stir in sugar until dissolved

Add the pumpkin, salt, cinnamon, ginger and cloves, mix well

Fold in whipped topping

Pour over crust



Refrigerate until set, about 3 hours

Remove sides of pan just before serving

Garnish with additional whipped topping if desired



Yield 16 servings

Black-Walnut Pumpkin Pie




1 1/2 cups cooked or canned pumpkin

1 1/2 cups milk

2 eggs, beaten

1 cup honey

1/4 teaspoon salt

1/4 teaspoon ginger

1/4 teaspoon nutmeg

1 teaspoon cinnamon

1/2 cup chopped black walnuts

9 inch umbaked pie crust with high sides



Combine pumpkin, milk and eggs. Stir in honey, salt, spices and black walnuts

Pour into pie crust and bake in very hot oven 450F. For 10 minutes

Turn heat down to moderate oven 350F. And bake until filling is firm in center about 40 minutes

Top with sweetened whipped cream.

Honey-Pecan Pumpkin Pie




2 cups cooked or canned pumpkin

1 cup honey

1/2 cup brown sugar

1/2 teaspoon salt

1/2 teaspoon ginger

1 teaspoon cinnamon

1/4 teaspoon nutmeg

3 eggs, slightly beaten

1 cup milk

1 1/4 cups evaporated milk

2 - 9 inch pastry shells

Pecan meats, ground or finely chopped



Mix together pumpkin honey, sugar, salt and spices.

add eggs, milk and cream

Mix thoroughly. Pour into pastry shells

Sprinkle generously with nuts

Bake at 450 for 10 minutes then at 325 for 45 minutesMakes two 9- inch pies

Impossible Pumpkin Pie



3/4 cup sugar

1/2 cup reduced fat Bisquick

2 tablespoons diet margarine melted completely

1 can evaporated skim milk

1/2 cup egg beaters 99% egg substitute

1 can pumpkin

2 1/4 teaspoons pumpkin pie spice

2 teaspoons vanilla



Preheat oven to 350



Mix all ingredients together and pour into 9" sprayed pan.

Bake for 55 minutes

Keep out at least two cups of mixture until you put the filled pie dish in the oven, then add the last 2 cups before closing oven. It really fills the pan up. But it makes a great looking pie and tastes good too.

Pumpkin Ribbon Pie:



5 c. corn chex cereal, crushed down to 1 1/4 cup...

1/3 c. firmly packed brown sugar..

1/4 tsp. ginger..

1/4 tsp. nutmeg...

6 T. margarine, melted..

1 c. canned pumpkin...

1 c. sugar..

1/2 tsp. cinnamon..

1/2 tsp. nutmeg..

1/4 tsp. salt..

1 tsp. vanilla..

1 c. whipping cream, whipped..

1 1/2 c. vanilla ice cream slightly softened...



Preheat oven to 300 degrees...grease 10" pie plate.. Combine cereal crumbs, brown sugar, 1/4 tsp. ginger, and 1/4 tsp. nutmeg. Add margarine. Mix thoroughly. Press evenly into bottom and up sides of pie plate. Bake 10 mins. Cool completely.

Combine pumpkin, sugar, salt, cinnamon, nutmeg, 1/4 tsp. ginger, and vanilla. Fold in whipped cream. Evenly cover bottom of cooled pie crust with ice cream. Spoon pumpkin filling on top.. Cover with foil and freeze 6 hrs...over night is best.

Makes 1 10" pie..

Baked Pumpkin Casserole




1 can (1lb, 13oz) Pumpkin (3 cups)

2 tbsp granulated sugar

2 tbsp butter or margarine, melted

1/4 tsp mace

1/2 tsp salt

Dash pepper

2 eggs, slightly beaten

1/2 cup coarsely chopped pecans



Glaze

1/2 cup light brown sugar, firmly packed

1/4 cup maple syrup

1/2 cup pecan halves



Preheat oven to 350F

Lightly grease 1 quart casserole

Combine pumpkin, granulated sugar, butter, mace, salt, pepper, eggs, and chopped pecans in large bowl, mix well

Turn into casserole

Make Glaze

Mix brown sugar and syrup in small saucepan

Heat, stirring, until sugar is dissolved, bring to boiling

Cool slightly

Arrange pecan halves around edge of casserole

Cover pumpkin and pecans with glaze

Bake 40 minutes

Makes 6 to 8 servings

Great Pumpkin Parfait




1 package (3oz) Jell-O Orange Flavor Gelatin

1 cup boiling water

1 package (4-serving size) Jell-O Vanilla Flavor Instant Pudding and Pie Filling

1 cup cold milk

1/2 teaspoon pumpkin pie spice

1 can (16oz) pumpkin

1 cup thawed Whipped Topping

1/4 cup cold water



Dissolve gelatin in boiling water.

Prepare pudding as directed on package, using 1 cup milk and beating 1 minute. Blend in spice and 1/2 cup gelatin.

Chill until thickened.

Then beat until fluffy.

Blend in pumpkin.

Fold in whipped topping.

Spoon into dessert glasses.

Chill.

Add cold water to remaining gelatin.

Chill until slightly thickened.

Spoon into glasses on top

Hallow'ed Pumpkin Tarts




Pastry for 2 crust pie

3/4 cup canned pumpkin

1 can (6oz) evaporated milk, undiluted

1 cup light brown sugar, firmly packed

2 eggs, slightly beaten

2 tsp pumpkin pie spice

1/2 tsp salt



Divide pastry into 8 equal parts

On lightly floured surface, roll each portion into a 5 inch circle

Use to line 8 (3-1/2 inch) tart pans or 8 (5oz) custard cups, pressing each circle firmly to bottom and side

Trim pastry from top edge

Reroll trimmings

Cut into 8 (1-1/2 inch) circles

Then trim each circle to resemble a pumpkin

Refrigerate, on waxed paper, along with tart shells until ready to use



Meanwhile, preheat oven to 400F

In large bowl, using rotary beater, beat pumpkin, evaporated milk and sugar

Add remaining ingredients, beating until well combined

Pour pumpkin mixture into each tart shell

Bake tarts, on cookie sheet, 25 to 30 minutes, or until knife inserted in filling comes out clean

Last 10 minutes or baking, place a pumpkin cutout on each tart

Let cool on wire rack

Serve garnished with whipped cream, if desired

Makes 8

Pumpkin Pancakes



2 c. Bisquick mix

2 tbsp. brown sugar

2 tsp. cinnamon

1 tsp. allspice

1 1/2 c. skimmed evaporated milk

2 tbsp. oil

2 eggs

1 tsp. vanilla

1/2 c. pumpkin



Mix all ingredients well & drop w/ladle onto a hot griddle or use a lg. iron skillet which has been greased well.

Pumpkin Muffins


Ingredients

  • 4 Eggs
  • 2 cups sugar
  • 1 1/2 cups cooking oil
  • 1 3/4 cup pure pumpkin
  • 1 1/2 tsp cinnamon
  • 2 tsp Baking Powder
  • 2 tsp Baking Soda
  • 1 tsp salt
  • 3 cups flour
  • 1 cup raisins
  • brown sugar



Procedure

Beat the eggs, sugar, oil and pumpkin till smooth.



Add the spices to the flour and mix well then add to the pumpkin mixture. Add the raisins.



Fill you tins 2/3 full and then sprinkle with brown sugar.



Bake at 375 for 15-20 minutes.





These muffins are very yummy and an excellent way to get your kids to eat their veggies, lol!! I got it from a wonderful woman at work named Helen.

Pumpkin Ice Cream




Melt over simmering water

10 marshmallows, diced

1 tbsp boiling water



Meanwhile, combine in bowl

1 cup canned pumpkin

1/3 cup firmly packed brown sugar

2 egg yolks, slightly beaten

2 tbsp orange juice



And a mixture of

1 tsp cinnamon

1/2 tsp ginger

1/2 tsp nutmeg

1/2 tsp salt

Blend thoroughly with marshmallows

Cook over simmering water, stirring constantly, about 10 min

Pour into a bowl and set in refrigerator to chill

Using chilled bowl and beater, beat until of medium consistency



Then add 1 cup chill whipping cream



Fold whipped cream into chilled pumpkin mixture

Pour into 1qt refrigerator tray

Freeze until firm

Pumpkin Patch Bread




1-1/2 cups sugar

1 cup canned pumpkin

1/2 cup oil

2 eggs

1/2 cup water

1-2/3 cups flour

1 tsp baking soda

3/4 tsp salt

1/4 tsp baking powder

1/2 tsp ground cloves

1/2 tsp cinnamon

1/2 tsp nutmeg

1/2 cup chopped pecans



Preheat 350

Grease a 9x5x3 inch loaf pan

In large mixing bowl, combine sugar, pumpkin, oil, eggs and water

Combine flour, baking soda, salt, baking powder, cloves, cinnamon and nutmeg

Gradually add to pumpkin mixture and mix well

Fold in pecans

Pour into prepared pan

Bake 70 to 80 minutes or until toothpick inserted near center comes out clean

Cool 10 minutes before removing from pan to wire rack to cool

Makes 1 loaf

Pumpkin Custards




3 eggs slightly beaten

1 (15oz) can pumpkin

1-1/2 cups whipping cream, half and half, or light cream

2/3 cup packed brown sugar

1 tsp pumpkin pie spice

1/2 tsp salt

2/3 cup coarsely chopped pecans, toasted

1/4 cup maple syrup



Preheat oven to 350

In a large mixing bowl combine eggs, pumpkin, cream, brown sugar, pumpkin pie spice and salt

Mix well with a whisk

Divide mixture among 8 (6oz) custard cups

Place in a roasting pan

Pour hot water into pan around custard cups to a depth of 1 inch

Bake for 45 to 55 minutes or until set

Remove cups from water

Cool slightly on a wire rack

In a small bowl, combine chopped, toasted pecans and maple syrup, spoon ontop of warm custards

Serve warm or chilled

Luscious four layer Pumpkin Cake



1 pkg (2 layer yellow cake mix

1 can (15 oz) pumpkin, divided

½ cup milk

1/3 cup oil

4 large eggs

1 ½ tsp pumpkin pie spice, divided

1 pkg (8 oz) cream cheese, softened

1 cup powdered sugar

1 tub (8 oz) cool whip topping thawed

¼ cup caramel topping

¼ cup chopped pecans

Preheat oven to 350

Grease and flour two 9 inch round cake pans

Beat cake mix, 1 cup of pumpkin, the milk, oil, eggs and 1 tsp of the pumpkin pie spice in large bowl with electric mixer on medium speed until well blended

Pour evenly into prepared pans

Bake 28 to 30 minutes or until wooden toothpick inserted in centers comes out clean

Cool in pans 10 minutes

Remove from pans to wire racks, cool completely

Beat cream cheese in small bowl with electric mixer on medium speed until creamy

Add sugar, remaining pumpkin and remaining ½ tsp pumpkin pie spice, mix well

Stir in the whipped topping

Cut each cake layer horizontally in half with serrated knife

Stack layers on serving plate, spreading the cream cheese filling between layers Do not frost top of cake

Drizzle cake with caramel topping just before serving

Sprinkle with the pecans

Store leftover cake in refrigerator



Makes 16 servings 1 slice each
