| Carrot Cake Sift together 2 cups sifted flour 1 tsp baking powder 1 tsp baking soda 1 tsp cinnamon ¼ tsp salt Combine 1-1/2 cups salad oil 2 cups sugar Add 4 eggs, one at a time beating well after each Add dry ingredients to oil, egg and sugar mixture Stir in 2 cups finely grated carrots (measure them lightly do not press in cup Bake in 350 oven for 50 to 60 min Frosting 1 cup brown sugar 1-1/2 tbsp dark syrup 1 egg white 3 tbsp cold water ¼ tsp cream of tartar 1 tsp vanilla Cook for about 7 min. | Frosted Carrot Bars 4 eggs 2 c sugar 1-1/2 c salad oil 2 c sifted flour 2 tsp baking soda 2 tsp ground cinnamon 1 tsp salt 3 c finely grated carrots (9 medium) 1-1/2 c flaked coconut 1-1/2 c chopped walnuts Beat eggs until light Gradually beat in sugar Alternately add salad oil and flour sifted with soda, cinnamon and salt Mix well Fold in carrots, coconuts and walnuts Spread evenly in 2 greased 13x9x2 pans Bake in moderate oven 350F 25 to 30 minutes Set pans on racks and cool Spread with Cream Cheese Frosting if desired | |

| Carrot & Red Cabbage Salad
1 cup sour cream
2 tsp olive oil
1 tsp lemon juice
1/2 tsp salt
2 cups finely shredded red cabbage
4 medium carrots, scraped and shredded
1/2 cup minced green olives
2 tbsp minced green onions
Blend sour cream, olive oil, lemon juice and salt.
Combine cabbage, carrots, olives and onion.
Pour sour cream mixture over vegetables and toss lightly.
Chill
Serves 6 to 8 | |
