Baking Powder Biscuits


2 cups flour

4 level tsp baking powder

1/2 tsp salt

3/4 cup sweet milk

2 tbsp shortening



Sift flour once before measuring and again with baking powder and salt

Mix in the butter with a knife or tips of fingers until mealy

Add milk gradually to form soft dough

Pat out to 1/2 inch thick

Cut and place rounds close together on greased shallow pans

Bake 15 minutes in very hot oven 425

Baking Powder Biscuits My Mother’s Recipe

1 cup flour

½ tsp salt

1 ½ tsp baking powder

2 tbsp fat

1 tbsp milk

Basin Rolls My Mother’s Recipe

Roll dough to ¼ inch thick spread with the following filling

1/3 cup raisins

1 Tbsp soft butter

1 tbsp sugar

¼ tsp cinnamon

Roll like jelly roll lengthwise cut into ½ slices and bake in greased pan at 150 for 20 minutes

Cheese Biscuits




Sift together 2 cups of flour and 3 teaspoons baking powder.

Add 3/4 cup grated American cheese and 1/2 teaspoon salt.

Add 2 tablespoons butter and mix in thoroughly with steel fork

Add 1 cup milk

Drop from spoon in small portions on baking sheet

Bake 15 minutes in moderate oven (375F)

Makes about 18 small biscuits.

HARDTACK BISCUITS



Hardtack Biscuit Recipes
Probably the one, first, and most requested recipe on the net, in the discussion
groups, or
anywhere ACW enthusiasts get together, is for hardtack (also known as 'tack,
iron plate biscuits,
army bread, and other colorful names). OK, out of the 1862 US Army book of
receipts, is one
that is guaranteed to keep your dentist happy with bridge and upper plate work, and
not satisfy
your culinary hunger. But these actually work and stay fresh for eons.

5 Cups Flour (unbleached)
1 Tablespoon Baking Powder
1 Tablespoon Salt
1-1 1/4 cups Water
Preheated Oven to 450

In a bowl, combine the ingredients to form stiff, but not dry dough. The dough should
be pliable, but not stick a lot to your
hands.

Take this mound of dough, and flatten it out onto a greased cookie sheet (the ones
with a small lip around the edge...like a
real shallow pan...), and roll the dough into a flat sheet aprx. 1/2 inch thick.

Using a bread knife, divide the dough into 3x3 squares. Taking a 10-penny nail, put a
3x3 matrix of holes into the surface of
the dough, all the way thru, at even intervals (Village tinsmithing works sells a cutter
that does all of this...works great!).

Bake in the oven for aprx 20 Min., till lightly browned. Take out and let cool.
Do this the day before your go on the field, and your will have enough tack to fill your
haversack. It will be somewhat soft on
Saturday morning, but, by Sunday, you should soak it in your coffee before eating,
else you will have a hard time chewing.

Hasty-Tasty Biscuit Tricks


Sage Biscuits

Add 1/4 tsp sage to the dry ingredients for biscuits (2 cup flour or biscuit mix) and bake as usual

Wonderful with chicken or pork



Onion Biscuits

When you have leftover canned French-fried onions, chop them fine and add 1/2 c of them to biscuits (2 cup flour or biscuit mix) and bake as usual

Wonderful beef or lamb



Waffled Biscuits

Place canned refrigerator biscuits on hot waffle iron, Bake until light golden brown

The grid flattens the biscuits they are crunchy-crisp outside, light within



Strawberry Biscuits

Place 1 tbsp strawberry preserves in bottom of each greased muffin-cup pan

Top with refrigerator biscuits and bake as directed on packageTurn out of pan at once.

Herbed Buttermilk Biscuits




1/3 cup fresh parsley, minced

2 green onions, including tops, minced

1 tsp dried basil

2 cups all purpose flour

2 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

6 tbsp vegetable shortening, room temperature

1/2 cup buttermilk

2 tsp Dijon style mustard



Combine parsley, onions, basil, flour, baking powder, baking soda and salt in a large bowl

Stir until well mixed



Cut in shortening until mixture resembles coarse crumbs



Combine buttermilk and mustard

Add to flour mixture, stirring just until dough is mixed

Do not over mix



Turn out onto floured board

Roll out to 1/2 inch thickness

Cut into 2 inch rounds

Place on ungreased baking sheet, 1 inch apart

Bake at 450F until golden, 12 to 15 minutes

Mayonnaise Biscuits


2 cups all purpose flour
4 tsp. baking powder
3/4 tsp salt
3/4 cup milk
1/4 cup mayonnaise
Mix dry ingredients together.
Mix mayonnaise and milk together.
Mix until dough holds together.
Place on lightly floured board and smooth dough.
Roll and cut about 3/4" thick.
Bake at 450 degrees F for 12-15 minutes

Make Just What You Need Biscuits




8 cups all purpose flour

1/3 cup baking powder

2 tsp salt

8 tsp sugar (optional)

1 cup shortening (solid)



Mix in the shortening, using a pastry blender or, the old fashioned way, two table knives

It should look like coarse meal



Store in a tightly sealed container in the refrigerator

It can be stored in a cupboard but will last longer, depending on the climate, conditions of your cupboard or pantry



When you want to make biscuits,

Preheat the oven to 450 degrees



Then simply mix 1 cup of the mix with

1/3 cup of milk



Shape the biscuits as you would from a store bought biscuit mix and bake

For 12 to 15 minutes and enjoy these low-cost, mouth watering yummy biscuits

Kid's Quick Cream Biscuits - OUTSTANDING!


This is an excellent recipe for kids to
make, easy, quick and hard to mess
up.
.
2 cups self rising flour
1 cup plus 2 tsp. whipping cream or
heavy cream

That's it for the ingredients!
.
Preheat oven to 450F. Combine
ingredients, stirring with a fork until
flour is moistened. Turn dough out on
a lightly floured surface; knead only 4 or
5 times, and roll out to 1/2 inch thickness.
.
IMPORTANT! Do NOT roll out thin, as they DO NOT RISE. I repeat, DO NOT
ROLL OUT THIN. Cut with a 2 inch
biscuit cutter without twisting cutter.
.
Place on an ungreased baking sheet and
bake for 10 to 12 minutes, or until lightly
browned. Optional: Brush tops with melted margarine or bacon grease before
baking if desired.
.
OR, biscuits can be
made with 2 1/4 cups self-rising flour
and 1 cup half and half.
.
Yield: 1 dozen biscuits that are to die for drizzled with honey. This is good for beginning cooks and is economical. This is my down and dirty quick for Sunday dinner biscuit that reminds me of Granny's. .

Fannie Flagg's, Original Whistle Stop
Cafe Cookbook.

If you don't have self-rising flour on
hand, use:
2 cups all purpose flour
3 tsp. baking powder
1 tsp. salt.
.
I urge you to try this one because it
is really quick and easy and really
tasty. All my Sunday guests want
my secret recipe. HA! Enjoy!
Oh and when company comes, double
this recipe as my family of four cleans
out one pan and wants more. Best
eaten the day they are made.

Onion Buttermilk Biscuits


2 tbsp butter, melted

2 tbsp minced onion

1/8 tsp onion salt

1 (8 oz) pkg refrigerator buttermilk biscuits



Combine butter, onion and salt

Flatten biscuits on ungreased baking sheet with bottom of floured custard cup

Leave rim that cup makes

Fill biscuit center with about 1 tsp butter-onion mixture.

Bake in hot oven 425F for 8 minutes or until biscuits are light golden brown

Makes 10 biscuits

quick lazy herbal biscuits

Follow a Bisquick drop biscuit recipe until it comes to adding the liquids.
-Add 1/2 part ranch dressing and 1/2 water
-add herbs to include seeds of all types, sage, or Italian seasoning. Garlic of any type is always welcome. Amounts are sparing (or to taste) except garlic (use as much as you can stand). Add cheese if desired, any type can help, but adds fat.
-Bake as indicated on the box of Bisquick.
Has gone over well in fire stations and home.

Soda Biscuits




1/2 teaspoon soda

2 cups white flour

1 tablespoon baking powder

3/4 cup sour milk

2 tablespoons butter

1/2 teaspoon salt



Work flour into butter thoroughly. Add the dry ingredients and then pour on the milk gradually. Roll out and cut into rounds or drop into greased muffin pan

Bake about 15 minutes in a hot oven (400F)
