| Garlic Potato Biscuits 1/2 lb diced peeled potatoes (about 1 large)3 to 4 garlic cloves, peeled1/3 cup butter, softened1 tsp salt1/4 tsp pepper2 cups all purpose flour1 tbsp baking powder1/3 cup milk Place potatoes and garlic cloves in a saucepanAdd enough water to coverBring to a boilReduce heat, cover and simmer until tenderDrain well Mash potatoes and garlic with butter, salt and pepper in a bowl, combine flour and baking powder, stir in potato mixture until mixture resembles coarse crumbsAdd milk and stir well Turn onto a lightly floured surfaceRoll to 1/2 inch thicknessCut with a floured 2 inch biscuit cutterPlace 1 inch apart on ungreased baking sheetBake at 450 for 10 to 12 minutes or until golden brownServe warmYield 15 biscuits | |
