| Sage-Butter Sauce Sauté in 1 tbsp unsalted butter 3 tablespoons shallot, minced Add and Reduce1/2 cup dry white wine1/2 cup heavy cream1/2 cup low sodium chicken broth1 tsp fresh lemon juice Whisk in 4 tablespoons (1/2 stick) butter cold and unsalted and cubedFinish with1-2 tsp minced fresh sage SaltWhite pepper Cayenne to taste Sauté shallot in butter in a small saucepan over medium heat just until soft, 2 to 3 minutesAdd wine, cream, broth, and lemon juiceSimmer until reduced by half8 to 10 minutes Whisk in butter, 1 tbsp at a time, stirring constantlyDo not add more butter until previous addition has melted completelyFinish sauce with sage and seasoningsKeep warm in a water bath until ready to serve | |
