Parsley Sauce




3 tbsp butter or margarine

3 tbsp flour

2 cups milk

1 tsp salt

1/4 tsp pepper

3 tsp lemon juice

2 tbsp finely chopped parsley



Melt butter in small saucepan, over medium heat

Remove from heat, stir in flour

Gradually add milk, stirring after each addition

Stir in salt and pepper

Bring mixture to boiling, stirring

Reduce heat, simmer 1 minute

Stir in lemon juice and parsley

Serve over Salmon

Parsley Sauce


Add 2 to 4 tablespoons chopped parsley and 1 teaspoon lemon juice to drawn butter sauce just before serving

Drawn Butter Sauce




2 tbsp butter

1-1/2 tbsp flour

1 cup boiling water

1/4 tsp salt

Few grains cayenne pepper

1 tbsp butter



Melt the fat in the saucepan or in the top of a double boiler

Stir in the flour and cook for several minutes

Add gradually and stirring constantly 1 cup boiling water, cooking until thickened and add seasonings

Add the extra tablespoon of butter to the cooked sauce shortly before serving
