Mustard Sauce

Melt 3 tablespoons butter
Add 1 teaspoon hot water
3 teaspoons prepared mustard
Serve while hot over fish

Mustard Sauce




1/2 onion, chopped

1/4lb butter

2 tbsp flour

1/2 cup white wine

2 cups beef or veal broth or stock

2 tsp English mustard



Cook onion in butter a few minutes

Blend in flour and stir until evenly mixed

Add wine and stock and stir until smooth

Simmer 10 minutes, stirring frequently

Add mustard and stir until smoothly mixed

Makes about 3 cups sauce
