Hollandaise Sauce


4 egg yolks

1 cup butter

Juice of one lemon

1/4 teaspoon salt

Pepper

1/2 cup water



Cream the butter and add egg yolks one at a time

Stir well

Add the juice of lemon and seasoning

Just before serving, stir in the hot water and cook until thick in a double boiler

Hollandaise Sauce




2 tbsp white wine vinegar

1 tbsp water

1 tbsp freshly squeezed lemon juice

3 egg yolks

1/2 cup butter, melted

Dash salt and pepper



In a saucepan or in top of a double boiler, combine vinegar, water and lemon juice

Place over hot, not boiling, water

Whisk to combine

Add egg yolks, one at a time, beating constantly

Gradually add butter

Cook until thickened, beating all the time

Remove from heat

Add salt and pepper
