| Creole Sauce 2 tbsp bacon fat or salad oil1/2 cup chopped onion1 clove, garlic, finely chopped1/4 cup chopped green pepper1 can (1 lb 12oz) tomatoes, undrained1 tsp celery seed1 bay leaf1 tsp salt2 tsp sugar1/2 tsp chili powder1 tbsp chopped parsley In hot bacon fat in medium saucepan, sauté onion, garlic, and pepper until tender about 5 minutes Add remaining ingredients, simmer, uncovered, 45 minutes, or until mixture is thickened, stir occasionallyStrain, if desiredMakes about 3 cups | |
