Creole Sauce




2 tbsp bacon fat or salad oil

1/2 cup chopped onion

1 clove, garlic, finely chopped

1/4 cup chopped green pepper

1 can (1 lb 12oz) tomatoes, undrained

1 tsp celery seed

1 bay leaf

1 tsp salt

2 tsp sugar

1/2 tsp chili powder

1 tbsp chopped parsley



In hot bacon fat in medium saucepan, sauté onion, garlic, and pepper until tender about 5 minutes



Add remaining ingredients, simmer, uncovered, 45 minutes, or until mixture is thickened, stir occasionally

Strain, if desired

Makes about 3 cups

Creole Sauce


4 tablespoons canned tomatoes

2 tablespoons chopped onions

2 tablespoons chopped green peppers

2 tablespoons chopped red peppers

2 tablespoons chopped parsley

2 tablespoons chopped mushrooms

Salt

Paprika

2 cups brown sauce (see brown sauce recipe)

2 tablespoons butter



Simmer the onion in butter; add the peppers, tomato and mushrooms

Pour on the brown sauce and season very highly

Cook for 15 minutes and serve hot over steak
