Grapefruit Cake




Sift together and set aside



2 cups sifted cake flour

1-1/2 tsp baking powder

1/4 tsp salt

1/8 tsp baking soda



Cream together until shortening is softened



1/2 cup shortening

1-1/2 tbsp grated grapefruit peel



Add gradually, creaming until fluffy after each addition



1/2 cup sugar



Beat until thick and piled softly



2 eggs

1 egg yolk



Add in thirds to creamed mixture, beating well after each addition



Prepare

1/2 c plus 2 tbsp grapefruit juice



Beating only until smooth after each addition, alternately add dry ingredients in fourths, grapefruit juice in thirds to creamed mixture.

Finally beat only until smooth

Do not over beat

Turn batter in to pan



Bake at 350F for 30 to 35 minutes or until cake tests done

If desired sift confectioners sugar over the top
