Brownie Cookies




12 oz (about 2 cups) semi sweet chocolate chips

1 oz unsweetened chocolate, finely chopped

2 tbsp unsalted butter

1 tsp instant coffee powder

3 large eggs

1 cup plus 2 tbsp sugar

1 tsp vanilla extract

1/2 cup plus 2 tbsp unbleached all purpose flour

1/2 tsp baking powder



Preheat 350



In the top of a double boiler, over hot, not simmering, water, melt together the chocolates and the butter

Add the coffee powder and stir well

Remove from heat and cool to room temperature



In a large bowl, bet the eggs until foamy

Two tablespoons at a time, add the sugar, while continuing to beat for about 2 minutes, until the mixture is light and fluffy

Add the vanilla and the cooled chocolate mixture

Mix well

Sift the flour and baking powder into the egg/chocolate mixture, and mix well



Drop the dough in rounded teaspoons onto 2 ungreased baking sheets

Bake for 8 to 10 minutes, until the cookies are just set

Do not over bake

Remove from the oven and cool for 5 minutes

Using a spatula, transfer the cookies to a wire rack and cool completely
