| Brownie Cookies 12 oz (about 2 cups) semi sweet chocolate chips1 oz unsweetened chocolate, finely chopped2 tbsp unsalted butter1 tsp instant coffee powder3 large eggs1 cup plus 2 tbsp sugar1 tsp vanilla extract1/2 cup plus 2 tbsp unbleached all purpose flour1/2 tsp baking powder Preheat 350 In the top of a double boiler, over hot, not simmering, water, melt together the chocolates and the butterAdd the coffee powder and stir wellRemove from heat and cool to room temperature In a large bowl, bet the eggs until foamyTwo tablespoons at a time, add the sugar, while continuing to beat for about 2 minutes, until the mixture is light and fluffyAdd the vanilla and the cooled chocolate mixtureMix wellSift the flour and baking powder into the egg/chocolate mixture, and mix well Drop the dough in rounded teaspoons onto 2 ungreased baking sheetsBake for 8 to 10 minutes, until the cookies are just setDo not over bakeRemove from the oven and cool for 5 minutesUsing a spatula, transfer the cookies to a wire rack and cool completely | |
