Banana-Walnut Soufflé Pie
This is recipe is from the 1940's

1-1/2 cups confectioner’s sugar, sifted
1 cup mashed ripe bananas
2 egg whites
2 tsp lemon juice
1/4 tsp salt
1/8 tsp cream of tartar
1/2 cup finely chopped walnuts
1-1/2 tsp vanilla
1 (9inch) pie shell, baked until just beginning to color
1/2 pint heavy cream, whipped with 1 tbsp sugar
Walnuts, halved or chopped

Preheat oven to 375 degrees
Mix confectioners sugar, mashed bananas, egg whites, lemon juice, salt and cream of tartar
Beat until mixture stands in soft peaks, about 4 minutes at high speed of electric mixer
Stir. In finely chopped walnuts and vanilla
Heap in semi baked pie shell
Bake 25 to 30 minutes or until top is well browned
Filling puffs up in baking, but will settle when cool
Serve with lightly sweetened whipped cream topped with walnuts
Serves 8

Banana Meringue Cream Pie




Sugar

6 tbsp flour

1/4 tsp salt

2-1/2 cups milk

3 eggs separated

1 tbsp butter or margarine

1/2 tsp vanilla extract

2 or 3 fully ripe bananas

Baked 9 inch pie shell

1/4 tsp cream of tartar



Mix 1/2 cup sugar, the flour and salt in top of double boiler

Add milk and cook, stirring, over boiling water until thickened

Cover and cook, stirring occasionally, 10 minutes

Beat egg yolks slightly

Add a small amount of milk mixture slowly to yolks, put back in double boiler and cook, stirring, 2 minutes

Remove from heat and add butter and vanilla, cool

Slice bananas into shell and cover at once with cooked mixture

Add cream of tartar to egg whites and beat until foamy

Gradually add 6 tbsp sugar

Beating until very stiff

Pile lightly on pie and bake in preheated 400F oven for 5 minutes, or until golden

Cool before cutting

Cherry Banana Cream Pie




3/4 cup butter, softened, divided

2 cups crushed vanilla wafers (about 60)

3/4 cup confectioner’s sugar



Filling

1 cup heavy whipping cream

1/4 cup sugar

2 tbsp baking cocoa

1 cup chopped walnuts

1 large firm banana, thinly sliced

1/3 cup halved maraschino cherries

Whipped topping, chocolate curls and additional maraschino cherries



Melt 1/2 cup of butter, toss with the wafer crumbs

Press into a 9 inch pie plate

In a small mixing bowl, cream the remaining butter beat in confectioners sugar until combined

Spread over the crust



In another mixing bowl, beat the cream, sugar and cocoa until stiff peaks form

Fold in walnuts, banana and maraschino cherries

Spoon into crust

Cover and refrigerate the pie for 8 hours or overnight

Garnish with whipped topping

Chocolate curls and cherries

Yield 6 to 8 servings

Lemon-Buttered Bananas




6 medium bananas Use slightly under-ripe bananas, green tipped or yellow, not flecked with brown.



3 tbsp butter or margarine, melted

1 tbsp lemon juice

1-1/2 tsp seasoned salt



Cut a double thickness of heavy duty foil into 12 inch square

Turn up about 1/2 inch all around, to form a tray

Remove half the peel, lengthwise, from each banana

Leave rest of peel intact

In small bowl, combine butter with lemon juice and seasoned salt

Use to brush peeled section of bananas

Arrange bananas on foil tray

Grill, 3 inches from prepared coats, about 20 minutes, or until bananas are tender

Makes 6 servings

Banana Split Bread



1 cup sugar

1/2 cup butter, softened

2 eggs

2 cups flour

1 teaspoon baking soda

1 cup mashed bananas

1 (11-ounce) can mandarin oranges, drained

1 cup chocolate chips

1 cup coconut

1/2 cup chopped maraschino cherries



Preheat oven to 350 degrees.

Grease two 8x4-inch loaf pans



In a mixing bowl, cream sugar and butter, beat in eggs.

Combine flour and baking soda.

add to the creamed mixture alternately with the mashed bananas.

Stir in oranges, chocolate chips, coconut and cherries.

Pour into prepared pans.

Bake 50 to 55 minutes, until tester inserted near center comes out clean.

Cool 10 minutes.

Remove to wire rack and cool completely



Makes 2 loaves.

Glazed Banana Pie




1 package (4-serving size) Jell-O banana cream pudding and pie filling

1 1/2 cups milk

1 baked 9 inch pie shell, cooled

1 package (4-serving size) Jell-O Strawberry gelatin

1 cup boiling water

1/2 cold water

1 banana sliced



Prepare pie filling mix as directed on package for pie, reducing milk to 1-1/2 cups.

Pour into pie shell

Cover surface with wax paper.

Chill about 1 hour



Meanwhile, dissolve gelatin in boiling water.

Add cold water, chill until slightly thickened

Arrange banana slices on pie filling.

Spoon gelatin over bananas

Chill until firm, about 2 hours

Banana Split Float




2 ripe medium size bananas

3 cups cold milk

1 pkg frozen, sliced sweetened Strawberries thawed

1-1/2 pints Chocolate ice cream softened



In a mixer or blender, mash bananas, Cold Milk, Strawberries and 1/2 pint Ice Cream, beat well, Until blended

Pour into a tall glass, chilled, and top with a scoop of Ice Cream.
