| Marvelous Mushroom Soup 1/2 lb fresh mushrooms, sliced1 large onion, finely chopped1 garlic clove, minced1/2 tsp dried tarragon1/4 tsp ground nutmeg3 tbsp butter1/4 cup all purpose flour2 cans (14-12 oz each) beef broth1 cup (8 oz) sour cream1/2 cup half and half cream1/2 cup evaporated milk1 tsp lemon juiceDash hot pepper sauceSalt and pepper to taste In a Dutch oven or soup kettle, sauté the mushrooms, onion, garlic, tarragon and nutmeg in butter until vegetables are tenderStir in flour until smoothGradually add broth, bring to a boil, stirring constantly Reduce heat to low, slowly add sour creamCook and stir until smoothStir in cream and milkAdd lemon juice, hot pepper sauce, salt and pepperHeat through but do not boilYield 6 servings | |
