Mexican Candy
Caramel candy with the consistency of fudge


2-1/2 cups sugar
1 cup milk
1/2 cup butter
1 cup chopped black walnuts
1 tsp vanilla

Combine 2 cups of the sugar, milk and butter in small saucepan, bring to a boil and remove from heat
Put the remaining 1/2 cup sugar into a large heavy skillet and stir with a wooden spoon over medium heat until the sugar is melted and caramelized to a golden brown color
Slowly add boiled mixture to caramelized sugar stirring constantly, cook over low heat, stirring until mixture begins to boil, cook, stirring frequently, until it reaches the soft ball stage (240) or until small amount of syrup dropped into very cold water forms a soft ball
Remove from heat
Add nuts and vanilla
Beat until mixture loses its gloss and will hold its shape when dropped from a spoon
Pour into a lightly buttered 8 inch square pan and cool until set
Cut into squares before candy becomes too firm
Makes about 36 pieces of candy
