| Mexican Candy Caramel candy with the consistency of fudge 2-1/2 cups sugar1 cup milk1/2 cup butter1 cup chopped black walnuts1 tsp vanilla Combine 2 cups of the sugar, milk and butter in small saucepan, bring to a boil and remove from heatPut the remaining 1/2 cup sugar into a large heavy skillet and stir with a wooden spoon over medium heat until the sugar is melted and caramelized to a golden brown colorSlowly add boiled mixture to caramelized sugar stirring constantly, cook over low heat, stirring until mixture begins to boil, cook, stirring frequently, until it reaches the soft ball stage (240) or until small amount of syrup dropped into very cold water forms a soft ballRemove from heatAdd nuts and vanillaBeat until mixture loses its gloss and will hold its shape when dropped from a spoonPour into a lightly buttered 8 inch square pan and cool until setCut into squares before candy becomes too firmMakes about 36 pieces of candy | |
