Corn and Cheese Bread




1 cup all purpose flour

1 cup yellow cornmeal

3 tsp baking powder

1/2 tsp salt

1 cup milk

1 egg

2 tbsp honey

1/4 cup olive oil

1/2 cup finely minced onion

1 cup frozen or fresh whole kernel corn

1/2 cup shredded cheddar cheese



In a large bowl, combine flour, cornmeal, baking powder and salt



In a small bowl, mix the milk, egg and honey



In a skillet, heat the olive oil

Add the minced onion

Sauté over medium heat until onion is soft, 5 to 8 minutes



Add the liquids to the flour mixture along with the onion mixture, scraping in all of the oil

Stir until flour mixture is moistened

Add the corn and cheese



Turn batter into a buttered 9 inch square baking pan



Bake at 375F for 25 to 30 minutes until bread is browned on the edges and tests done

Serve warm
