| Corn and Cheese Bread 1 cup all purpose flour1 cup yellow cornmeal3 tsp baking powder1/2 tsp salt1 cup milk1 egg2 tbsp honey1/4 cup olive oil1/2 cup finely minced onion1 cup frozen or fresh whole kernel corn1/2 cup shredded cheddar cheese In a large bowl, combine flour, cornmeal, baking powder and salt In a small bowl, mix the milk, egg and honey In a skillet, heat the olive oilAdd the minced onionSauté over medium heat until onion is soft, 5 to 8 minutes Add the liquids to the flour mixture along with the onion mixture, scraping in all of the oilStir until flour mixture is moistenedAdd the corn and cheese Turn batter into a buttered 9 inch square baking pan Bake at 375F for 25 to 30 minutes until bread is browned on the edges and tests doneServe warm | |
